Delicious way to eat a healthy taco, instead of using tortillas, go for lettuce wraps instead! It will make you meal healthier, cutting out on carbs and keeps the crunchiness of the tortillas.
– For the meat:
- 1 onion
- 2 garlic cloves
- 1 red or green pepper
- 1 tomato
- Spices: cayenne pepper, chipotle powder, cumin, salt & pepper
– For the Tacos
- Lettuce buns (basically, cut the lettuce bottom and try to remove the lettuce without breaking)
- Diced tomatoes
- Greek Yogurt (Substitutes sour cream)
For the meat, sauté the onions, with the garlic for about 3 min. Then add the peppers and let it soften, on mid-low heat. Then add the tomatoes, followed by the meat. Mix it and try to break it down to avoid having big chunks of meat. Add the spices, eyeballing quantity.
Once ready, serve on a bowl and place all ingredients on the table. Then fun part is putting them all-together in your own lettuce flower!
